ZANYA COFFEE MÙA HÈ

Mùa Hè (Vietnamese for “summer”) is an anaerobic natural produced by our friends at Zanya in Lang Biang. This coffee shines with its bright acidity and pleasantly wine-like fruit notes. Its lactic and sweet character reminds us of whipped cream — a complex summer coffee that leaves a lasting impression.

The K’Ho people, whose privately owned farms are located at the foot of the Lang Biang mountain, are actively resisting land investors and the growing flower industry that threatens their culture and livelihoods. Together with the K’Ho, we’re proud to bring you this special coffee and support the preservation of coffee cultivation in the area.

The cherries for this lot are hand-harvested, sorted with the help of a visual sorting machine to remove unripe fruit, and floated before being placed in airtight fermentation tanks for 80 hours, where they ferment in the absence of oxygen. Afterward, the cherries are spread out on raised drying beds and dried evenly over the course of about 30 days, being turned multiple times each day.
